Chef Stuart Tracy, who is originally from Minot, ND and his wife Cheryl opened Pirogue Grille: A Midwest Regional Restaurant in September 2005. Located in downtown Bismarck, Pirogue Grille’s ambiance is reminiscent of a large metropolitan area with its long narrow space featuring exposed brick walls, high ceilings, rich walnut bar and warm inviting colors. It is establishing itself as a local favorite and a destination dining spot for travelers and theatre goers. Pirogue Grille offers a full bar and wine service to compliment each evenings dining experience.
Before opening the restaurant, Chef Stuart Tracy spent over a decade as the Executive Chef at The Rivery, a corporate retreat located sixty miles south of Bismarck. The retreat was utilized by local, international and Fortune 500 companies for business retreats. Prior to accepting the position at The Rivery, he held the position of Chef de Cuisine at the Fairmount Sonoma Mission Inn & Spa in Sonoma, CA. He is a graduate of the prestigious Culinary Institute of America and Walt Disney World’s Culinary Management Program. Stuart and Cheryl have traveled extensively around the world to get a thorough knowledge of local cuisines and the way they can be utilized at Pirogue Grille with a Midwestern flair.
